• Welcome to your Week 3!

This week you will learn about food composition or 'what's in food'.
In the first session: you will learn how food is composed of nutrient and non-nutrient components and how energy coming from food is measured. You will be introduced to the scientific approach to food composition, and you will have a chance to calculate energy coming from a particular food item.
In the second session: you will learn about nutrient recommendations (Nutrient Reference Values), and how these define the amount of nutrients that need to be consumed to best support health and keep the body functioning properly.
These topics constitute the basis of Nutrition study, and everything you learn during this week will then be applied in your live workshops and assessment tasks in this course.
Make sure you complete the tasks presented in the interactive books for each of the sessions this week. You will need this background knowledge engage in class discussions and to be an active participant in your live sessions. Your in-class activity will be reflected in your participation mark.
Some of the vocabulary used in this book maybe already familiar to you from the Glossary available on the course page.
