This course is the pilot course for the food science and engineering, and is intended for freshmen. The purpose of this course is to understand the knowledge system of food science and engineering. This course mainly expounds the meaning, content, characteristics and classification of food science and engineering, and introduces the scientific and engineering basis of this major. Students will have a general understanding of the content of food science and engineering, and develop interest in learning it. This course belongs to the nature of lecture.
